Breakfast of Champions

I really had know idea what I was going to eat this morning when I woke up. I usually have my own rendition of oatmeal or have an egg white omelette, but this morning I wanted to try something different. Mixing the recipes up a bit is important, because you don’t want to get bored eating the same things every time. Eating won’t be fun anymore….at least for me.

SO, I decided to make my own version of French Toast. A more healthy version, if you would. I found that it’s pretty easy to transform a not so healthy breakfast by just replacing some key ingredients.

I chose 2 slices of rye bread instead of white bread and
dipped them in egg whites with a dash of cinnamon.
After grilling them for a couple minutes on each side, I put about 1/2 tbsp of almond butter (in replacement on butter) on each slice. Finally, I placed some cranberries on top and finished it off with drizzled honey.

    • YES! It came out out so great. I was a little skeptical about making it without the yolk also, but the consistency and texture wasn’t any different to me. Let me know if you end up trying it!
